Recipe: Healthy Hazelnut Chocolates

I recently had to go through an elimination diet in an effort to find out if certain food types that had an adverse effect on my overall health.During the course of the diet, Mother’s Day arrived. Needless to say I was feeling very sorry for myself for not being able to scoff a box of chocolates! But my daughter, bless, her, surprised me with her very own version of hazelnut chocs that were simply delicious ! I couldn’t tell the difference between them and commercial chocolates. She has a silicone chocolate mould, which she picked up in TK MAXX for €6.99. Here’s the recipe:

Ingredients

2 tbs of melted coconut oil
1/8 cup of Raw Cacao ( not cocoa ) powder ( Supervalu carries it, as does all Health Stores )
1 tbs Date paste ( dried dates finely mashed )
1 tbs Hazelnut butter ( we use Meridian, available in Tesco, Supervalu and Health Stores )
A small handful of finely chopped hazelnuts.

Method

Whisk the cacao powder in to the coconut oil and add the dates
Half fill the moulds and put in the fridge to set.
Put a little hazelnut butter in the centre of each, and top with remaining chocolate mix.
Top with the chopped nuts and allow to set again.
Enjoy this dairy free, refined sugar free, gluten free treat !
